Cooking time: 1 hour, 5 minutes
1. Heat 45ml/3 tbsps oil over medium heat and fry garlic and onions until soft (8-10 minutes). Remove from heat and allow to cool.
2. Meanwhile, heat the remaining oil over medium heat and half the tomatoes and juice; stir and cook for 1-2 minutes. Add spices; lower the heat and cook for 6-8 minutes , stirring frequently. Add meat and adjust heat to medium-high. Stir and fry until meat changes colour (5-6 minutes).
3. Add water and bring to boil. Cover and simmer for 30 minutes. Place the fried onion mixture and remaining tomatoes in liquidiser and blend till smooth. Add to meat and bring to boil. Cover the pan and simmer for 35-40 minutes until meat is tender.
